Port St Mary WI serves up spud-inspired meals at festival

THE versatility of the spud is the theme of a cookery demonstration being given by Port St Mary WI at the Food and Drink Festival in Patrick this weekend.
The branch of the WI was chosen to represent the island’s WI federation at the festival after creating a sumptuous afternoon tea in June to celebrate the Queen’s diamond jubilee.
‘A lady from the board of trustees enjoyed the afternoon tea and was very impressed with what we did and how we served it,’ said member Sue Bould.
‘She asked if we would be interested in doing a demonstration on behalf of the WI at the festival. I was taken aback, I’m quite happy to do things in the background – in the spotlight I would freeze.’
Sue and fellow Port St Mary WI members Diane Helliwell and Tina Lawton will make five dishes from a ‘sack of spuds’: leek and potato soup, chorizo and potato tapas, bombay potato curry, potato wedges and fish cakes.
Sue said they will demonstrate, using mostly Manx produce, that ‘from very little money you can make healthy and nutritious and filling dishes for the family’.
