It was a sandwich in Florida that changed Harry Davies’ life. Stuffed with pulled pork, it opened Harry’s eyes to the possibilities of barbecue and led to him opening his business, Cow and Pig Smokehouse.

He bought and renovated an old trailer and kitted it out with a giant American smoking oven to turn it into a touring smokehouse. Some of you will have already tasted his products at last year’s Southern Agricultural Show.

Now he is to supply meat to the Secret Pizza Company in Castletown and he was there on Friday to help launch the new collaboration.

Secret Pizza owner, Tom Roe, said: ’Harry’s new and fresh, all his meat is Manx and he smokes it himself. We will be showcasing all his offerings, putting them on pizzas tonight. Then he’ll do a different special for us each month.’

Harry was also selling his products direct from the van: Porkstrami, Chandey Boeuf (Canadian style smoked brisket of beef), Espresso Rub Brisket and ’Soys Boys’ pulled pork. There’s also a vegan option, pulled jackfruit. There flavourings are mostly celery, mustard and soy but used to great effect and some of the meat is brined for a week before smoking.
